How it was and how it will be...
Our new restaurant near Moena stems from the hands and heart of Grandpa Fortunato: a place that holds stories, faces, and unforgettable moments. Here, generations of guests have sat down to taste the dishes of Fiorenza, who now shares the kitchen with her son, Chef Lorenzo. This transition is what is shaping our future: combining the roots of our homeland with an open view of the world, taking our history forward with a clear vision. A new chapter is about to begin, which we can’t wait to experience together with you.

The undulating mirrored ceiling reflects the light like the surface of an alpine lake, while the vibrant green upholstery recalls the surrounding conifer forests. At the centre, the globe celebrates our philosophy of openness to the world.
Private and secluded niches create an atmosphere of intimacy and discretion, like alcoves carved into the mountainside. The large windows bring the #latemarview on the stunning Dolomites directly to your table: the first rays of sunlight accompany your breakfast, while the glow of the stars lights up the evening.
The soul of the mountain, preserved in local pine wood and Dolomia stone. An intimate, authentic place filled with the essence of our valleys, where Alpine architectural tradition meets understated, refined elegance. Also the ideal setting for corporate events and family moments that leave a lasting impression, with the possibility to be reserved exclusively, too.

The parlour that holds our history. Dedicated to our “giaves” – grandparents in Ladin – this room decorated in warm hues is named after the people who brought the Latemar Hotel to life. It’s a place filled with Grandfather Fortunato’s paintings, our love for tradition, and conviviality. And your four-legged friend is also welcome here (upon request and reservation prior to arrival).

Every stay at Latemar includes our Essential Stay: your room or suite with access to the Oniro Spa, as well as a rich breakfast awaiting you each morning at the Mirage Restaurant, in the new buffet area.
Begin your day immersed in a bright and refined setting, where clean lines, natural materials and delicate oriental touches are enhanced by the morning light streaming through the large windows. Every detail has been carefully designed to accompany you through the perfect awakening, with a rich and balanced breakfast, sweet or savoury, created to transform each morning into a small pleasure to savour. A daily ritual that is already an experience in itself.

- Sweet corner. Cakes and homemade pastry products, made by mum Fiorenza with love.
- Savoury corner. Cured meats from our trusted butcher, cheeses from the local dairy, mountain butter, eggs for lovers of a savoury breakfast.
- Organic honey and jams. The authentic flavours of Val di Fassa.
- Bread corner. Various types of fresh and fragrant bread, from the small artisan bakery in the valley.

Chef’s Inspiration Dinner
In the evening, our restaurant in Val di Fassa is transformed. The lights dim, the #latemarview shines under the starry sky, and Chef Lorenzo guides you on an intimate, elegant culinary journey.
The Chef’s Inspiration Dinner is a four-course journey that changes every evening: dishes with Italian and international flavours, always accessible and surprising, meticulously presented. Local, 0km ingredients, prepared with creativity and respect for seasonality.
Every course finds its perfect pairing thanks to our tea & wine sommeliers: a selection of Italian and international wines, displayed in the new and elegant dedicated area, and fine loose-leaf tea, served hot or cold, in a teapot or tea bottle – because at Latemar, tea becomes your favourite travel companion.
It’s not just a dinner. It’s an experience for all the senses: the taste of the dishes, the light of the Dolomites at sunset, the intimacy of the private niches, the elegance of a designer environment.

The new 'Mirage' Restaurant is open daily also to external guests and local residents. Reservation is recommended.
